E9: One last stop before we can catch our plane to Thailand. To qualify for entry into Thailand under the ASQ program we need to get a PCR Covid test 72 hours, maximum, prior to flight. In addition we need to get a Fit to Fly form filed out by a doctor after the PCR test. We decided to go to Manila 4 days prior to flight so we could take care of everything there and not have to worry about flying to Manila the day before our Thailand flight. We also meet up with a friend we have known for 3 years, but we have actually never meet in person. Steffie gets to experience Buffalo Wild Wings for the first time ever. Amazing wings, ranch and good onion rings are all new encounters for her.

We were hanging around waiting for our watermaker to return from being repaired but after a week at Airlie Beach we decide it’s time to get out in the beautiful Whitsunday Islands and find our way to Marcona Inlet on Hook Island for some crabbing and beach bumming. We have a great sail over and catch some good sized mackerel along the way. DON”T MISS THIS ONE.- In the ‘Our Galley’ segment, Karen poaches beautiful deep sea Nannygai fillets in delicious spices and coconut cream to produce what Rob described as “One of THE tastiest fish dishes ever. The recipe would be great with any firm white fish species. You can find Karen's recipes and tips from Our Galley including this “Thai Poached Nannygai” at https://dreamtimesail.blogspot.com/p/our-galley.html About Nannygai Also members of the Litjanus family, the Small Mouth Nannygai and the Large Mouth Nannygai are two very similar fish that complete the trio more commonly just called “reds”, along with the Red Emperor. The fish can be identified by the mouth shape and size as their common name implies. Large mouth are considered the better eating of the two and will grow to a larger size, fish to 30 lb (13.6 kg) are common. The small mouth can obtain a weight of 22 lb (10 kg) and both fish can be pulled from the same school. More readily caught during the cooler months and at night from the deep water, 30 -60 metres, these fish fight all the way to the boat. During day light hours only those very experienced of fisherman know their haunts and try extensively to guard their secret location. The advent of quality sounders and GPS technology proving nothing is sacred anymore. Techniques identical to that required for Red Emperor, heavy gear / hand lines / sturdy rod and the standard dropper rig works best and once fish have been hooked the school can be kept in the area. You know that feeling when you’ve bitten more than you can chew? Winter sailing in New England is no joke, and it took its toll on both Delos and her crew. We find ourselves facing a gigantic project list to complete in only a few weeks before Karin's US Visa expires. After running aground 4 times we finally make it to a dock in Annapolis to begin tackling our list. Delos is now over 20 years old and she's in need of some love, and we're in the perfect place for us to get some work done. After writing our to-do list we both feel a bit stunned by what we’ve taken on, and things don't get easier as Brian heads in for surgery making him incapacitated for at least two weeks. We've been in George Town for the past week and not every single day is super exciting. Sometimes the weather makes it a little unfavourable to be out in the water and it gets a bit too murky to snorkel. We wanted to share what a typical day looks like aboard Jibsea when we're not sailing and when we're not out exploring. Run some errands, bake, tinker with our friends' broken watermaker and bake some more! Like living on land, it's not always eventful, but we hope you enjoy a glimpse into our typical day anyhow! PIZZA DOUGH RECIPE Yields 1 12" Pizza Crust INGREDIENTS - 1 package of rapid rise instant yeast (2 1/4 tsp) - 1 tsp white sugar - 1 cup of warm water (110 degrees F) - 2 1/2 cups bread flour - 2 tbsp olive oil - 1 tsp salt DIRECTIONS 1. Preheat oven to 450 degrees F. In a medium bowl, mix yeast, sugar, flour, oil and salt. Stir in warm water and mix until smooth. 2. Gently knead for a few minutes until dough feels smooth and elastic. Let rest for 10 minutes. 3. Turn dough out onto a lightly floured surface and pat/roll into a round. Transfer crust to a lightly greased pizza pan 4. Safe sailing. Boat: White Shadow is a Van De Stadt ‘Seal’ 36 (11 metres). She is hand made in steel, 2004, with a round bilge (hull) and a modified coach roof. This makes her a ‘one off’ and in my opinion the most beautiful Van De Stadt 36 ever built. The camera gear: Main camera is a Panasonic Hc- V700 with a Rode External mic with a sponge and dead kitten attached. Action, underwater scenes and small blogging is done with two Osmo action cams. Some boat shots are done with a Dji gimbal camera. Editing: Final cut pro on a Macbook. Most of the material for each video is filmed over a period of several weeks or so and the editing of each episode is normally done over a day. This process can take longer if original music is used or permissions are needed for copyrighted materials etc. Much time is spent sorting out technical problems. In this case I normally get the help of a younger person who understands computerie stuff! There are also times when filming, editing and uploading is not possible due to being at sea or in locations with no internet access. Content: I have found that filming and releasing material over a period of time is better than doing ‘vlog’ style videos and trying to make episodes out of whats happened in a week, regardless if it’s good content or not. By filming over a period of time I can be more selective in what goes into each video. My aim is to avoid ‘bland and mundane’ and have at least one or two exciting and interesting events in every video. Every video has to be entertaining. Comments and being at sea: I love reading your comments. Most weeks Im able to read everyone. I cant reply to everybody but I do read and enjoy them. Keep them coming! There are times that It might seem I'm not on the internet for certain periods, this is normally when Im at sea on passage. While Im out on the Ocean I have completely no communications with the outside World. After one year of planning and six months back in the US, we finally have the components of our catamaran arriving to us, which means the build can commence! Start your clocks - the two year process starts now!! With the few days before the container arrives, we prepare the tent by marking out where the forms will be placed. This is the base the catamaran will sit on, so we need each spot measured perfectly for the forms to sit on. We place and level bricks in these spots, and because of the slope inside our tent, also level the height of the pads from fore to aft, and port to starboard. Then, the morning we've been waiting for! Our container arrives bright and early on a bitterly cold day in Maryland - and us and our rag tag group of Patrons have only two hours to get all of the pieces out! Last summer, we took a break from sailboat life and went home to Colorado to visit with family and friends. At some point we missed boat life and went on an epic trip to one of our most favorite places in the United States. Lake Powell. We went with friends and enjoyed the stunningly beautiful, enchanting atmosphere that Lake Powell has to offer and of course had an incredible time playing with a brand new 2020 Malibu 24 MXZ wakesetter. During his time away from work, Jamie lived on board and cruised South East Asia. One of his life dreams is to sail around the world. His plans came together at the end of 2018 when he met a Filipina lounge singer in China. Princess was yearning for a vacation since she had been working many years to support her family. Finally, her siblings got their own jobs and she decided to join Jamie on Jupiter² and go sailing. It was a wild decision for her because she had never sailed before. For the first time, they sail for two weeks around Phuket, Thailand. She began to see what Jamie love about the sea. They both resigned from their jobs in early 2019 and began cruising full time. Hopefully some inspiration to "Quit Job and Go Sailing". We met in the summer 2015, we were introduced to each other by the virtual world. Eighteen months later we were getting married on a beautiful beach on Barbados, bare foot, very simple ceremony just like a dream! Two days after the wedding laying on the beach, talking about sailing, Carla suggested... why don't we sail around the world? Guess what Simon said? "Let's do it" He took it with no second thoughts! And here we are, two years after that day in Barbados, we started our adventure in Croatia. We made it happen working through all the challenges on the way. Now we are enjoying this wonderful life, and what a wonderful life it is! As we travel we will cross less fortunate countries, we would love to help to build a school or a health care centre, anything that these people may need, and in our beautiful world this is taken for granted. But for these people it's a dream, or may not even be a dream. We will look around and when the opportunity to help comes we will put our hands and hearts in to it. Much love
