CAMPING ONE-POT PAD THAI ½ package of rice noodles 2 tablespoons of peanut butter 1 packet soy sauce sriracha sauce 1 cup mixed chopped vegetables – bell peppers, asparagus, brussel sprouts or kale ½ cup protein – shrimp, diced chicken, smoked salmon, or tofu In a pot over a camping stove or campfire bring 12 ounces of water to a boil. Remove from heat, add rice noodles, and let sit 10 minutes. Dispose of most of the water, leaving about 4 ounces. Stir in peanut butter then add soy sauce and a healthy squeeze of sriracha to desired taste. Add raw vegetables and protein, heat through and serve.

SKILLET CHICKEN AND ACORN SQUASH 2 tablespoons avocado or coconut oil 6 chicken drumsticks 2 medium acorn squash 3 cups arugula 6 chicken drumsticks 2 medium acorn squash 3 cups arugula 1 lemon salt and pepper Place 1 tablespoon oil on the skillet and heat over medium-high heat. Add the chicken drumsticks and cook for about 10 minutes on each side. While the chicken is cooking, slice or cube the acorn squash. When the chicken is about 80% cooked through, set aside, and add another tablespoon of oil to the skillet. Cook the squash for about 5 minutes, flipping halfway through. Add the chicken back into the skillet and season to taste. Place a lid on the skillet and cook for 15 minutes or until the chicken is completely cooked. Add in the arugula and squeeze lemon over the entire dish.

Finally we start slowly our way to civilization up to Rotoava, the main town of Fakarava. We plan to make a few stops on the way up and on the first stop our anchor chain get stuck and we need help from friends to get it up again. Back in the main town we are back in Covid reality, wanting to go out to a bar for a beer we can't get anywhere, have some dicing fun with our friends from SY Zero and are happy that finally after 4 weeks a boat with gasoline arrives! We had found a pandemic-free oasis of sorts in Grenada and then SVG, but it wasn't meant to last. To their credit, these islands take even small outbreaks very seriously. So with the advent of a new semi-lockdown in St. Vincent and the Grenadines, we decide to do our part by leaving Bequia and heading to the much more remote Tobago Cays for a short period of self quarantine with some of our buddy boats. Eighteen months later we were getting married on a beautiful beach on Barbados, bare foot, very simple ceremony just like a dream! And here we are, two years after that day in Barbados, we started our adventure in Croatia. We made it happen working through all the challenges on the way. Now we are enjoying this wonderful life, and what a wonderful life it is! As we travel we will cross less fortunate countries, we would love to help to build a school or a health care centre, anything that these people may need, and in our beautiful world this is taken for granted. Sailing southern Cuba

In this episode, we secure our main sail to prevent it from flying out during Tropical Storm Eta, and our boat neighbor, Brenton who lives on Artemis, helps us take down our jib. We've never done that before, and performing this task during the preliminary winds of a tropical storm was not as easy as we thought.

I was pleasantly surprised by the Gulfstar 42. I like the layout, the cockpit design, and the shear amount of space in the engine room and lazarettes. Gulfstar is typically not a brand you find on people's lists for bluewater cruisers, but I don't think these boats should be counted out just yet. For the money, Gulfstars seem to offer more than other brands out there, meaning you can get a bigger boat with more accommodation for less. This particular boat might make a great Caribbean cruiser with some time and money put in for a refit. What do you think?
