Have we just stumbled upon one of the world's oldest cruising grounds? The Vikings liked to use it to 'winter over', more than 1,500 years ago! Orkney Island has such a large Neolithic history, that with our second chance to visit this island, we want to explore as much of it as possible. Scooting around on our handy new bikes, we were able to see the Scapa Flow, one of the largest protected harbors in the world, and a favorite of Vikings in millenia past. Further inland, we visited places like the Maeshowe Chamber Carin, and Ring of Brodgar, all built around 2,500 BC, as well as the Stones of Stenness. Which are believed to be the oldest stone henge in the British Isles. Once we'r able to see all we can by land, we bring Elements over to a protected anchorage next to a long sandy beach, where the fall weather changes from storms to sun just long enough for us to bring Georgie out for an afternoon at the beach. Barbuda's Frigate Bird Colony is the largest in the western hemisphere. Located in the capital of Barbuda, in the large Codrington Lagoon, it is only accessible by boat with a tour guide. In this video, BuzzFeed producer Erin Phraner shares one of her favorite easy meals for a weeknight dinner that make PERFECT lunch leftovers: Toddle-Friendly Lentil Soup. It's a pantry meal with lots of flavor & it's super healthy. Here's how it's done... EASY LENTIL SOUP SERVES: 4 to 6 Olive oil, for cooking 1 chopped onion 1 chopped carrot 1 clove garlic, minced 2 cups dried lentils 1 (15-oz) can diced tomatoes 4 can-fulls water 1 teaspoon ground cumin Salt & pepper, to taste 1. Heat olive oil in a large pot. Add the onion, carrot and garlic and cook until soft, about 5 minutes. 2. Add the lentils and cook, stirring, 3 minutes. Add the tomatoes, water, cumin, salt and pepper. 3. Bring to a simmer and cook, stirring occasionally, 1 hour or until lentils are tender. 4. Transfer half the soup to a blender; blend until smooth. Return to the pot and stir to combine. NOTE: Want to spice it up? Try stirring in lemon juice, cider vinegar or hot sauce for a little kick. Serve topped with olive oil, parsley or yogurt! *Leftovers are GREAT for lunch!
