This past weekend was as good as it gets in the kelp forests of Monterey Bay—ocean sunfish (Mola mola) patrolling the dropoffs, rockfish schools lazily hiding among the columns of the kelp cathedral, millions of pyrosomes washing up with the currents among the other jellies; and all of it bathed in the clear jade-blue waters of coastal California at its best. With everything going on in the world, I figured I'd throw together a long-form video of the highlights. There's no music, just me breathing—though, as a photographer, I'm using my breathing as buoyancy, so it may or may not be very relaxing. If it is, great! Vlog#23 This time we sail to Santa Maria, Mexico. It was incredibly beautiful. Not many people stop here as there isn't a town with stores to provision in or anywhere to buy diesel, but its definitely worth it. We found a sand dollar beach that was covered in them. We went into an estuary that was very tricky to get into to. It was as though it had its own bar crossing, so we had to time our approach and exit, although we still managed to get soaked on the last wave on the way out. Along the estuary there are many houses and all the locals were kind and waved as we rode by. A panga even waved us over to the right spot to get into the estuary when we were clearly missing the entry way as it is kind of hidden! It is very easy to prepare in a boat and can be cook on the barbecue or in a skillet pan. We like them spicy, but it is not mandatory and you can remove the red chili if you want to. As usual, this recipe is adapted for boating. If you don't find Ras-El-Hanout you can do it yourselves mixing: cardamom, cumin, clove, cinnamon, nutmeg, mace, allspice, dry ginger, chili peppers, coriander seed, peppercorn, sweet and hot paprika, fenugreek, and dry turmeric. This is a recipe in itself. This is why it is easier to buy it. It can kept in a boat for a long time so we always have stock before sailing. Recipe 2 lbs. of pork, lamb or chicken. 1/4 chopped onion 1/2 tbsp. of red chili (optional if you don't like spicy) 1 tbsp. of olive oil 1/2 tbsp. of mint (optional) 2 tbsp. of Ras-El-Hanout 1/2 tbsp. of cumin (optional) 1 tbsp. of lemon juice Salt to taste 1. Chop the meat (pork, chicken or lamb) 2. Mix the meat and all ingredients together in a bowl 3. Marinate at least 2 hours (24 better) 4. Cook on a grill or iron skillet pan until browned on the outside (don't overcook or it will be too dry !!) Eat with rice, couscous, bread or salad.
