Brunswick stew is a simple one-pot meal in which everything gets cooked in the same pot. Every new beginning come from new beginnings end! One week to departure, we are saying goodbye to the life we built here in Sweden. About 10 years ago, Ryan and I left our home countries to come and settle in a land that offered us professional opportunities. Leaving Sweden is also emotional, as Ryan and I  had nothing when we arrived here. For the last 10 years, we worked hard to earn everything we have. From our language skills, our nice apartment, our jobs and friends network, settling in Sweden was as hard as it was rewarding… Because we don’t have family here in Sweden, our friends became like family to us. We met as 20-something party animals and saw each other go from young and wild expats to getting married, starting families and move into houses. We are excited for our big adventure, but saying goodbye to our Swedish family is hard! Someone else likes moving? No one? Yeah... that's what I thought... The process of moving on the boat was absolutely exhausting, and between moving out of the apartment, moving in on the boat, getting settled, getting our tenants moved in and selling the car, we didn’t have a minute to ourselves. During our last night in the apartment, I found myself doing laundry at 11PM, because we had forgotten this was going to be our last opportunity to use our washing machine. We also say goodbye to toilets that don't constantly move, big nice showers, humongous fridge, walk-in closet, my KitchenAid… All that comfort that we took for granted for so many years, before moving in the small space that our boat is. We threw a little goodbye party during which I asked our friends to record themselves and tell the World what it was like to hear from us about our sailing project for the first time. Let’s just say the announcement was met with a fair touch of skepticism! We are setting sail around the day this video will be published, and more excited than ever to explore this new life of ours! On this episode I install the ports on the holding tank, get all the plumbing sorted out, install the Y valves and figure out the best way to align and find the best spot for the macerator pump. The hose that leads to the Thru-hull would NOT go on so I ended up getting a heat gun and after sometime was able to get it to seat. I make my project videos on the slow side letting people see what I did and how I dealt with obstacles, in past videos my viewers have thanked me for not jumping over all of the details and getting right to the finished project so while this might not be the most exciting video it might help some people out there see how I dealt with certain aspects of the project. Set aside to chill in fridge 2 Ripe Avocado fold cooked shrimp in dressing and chill to liking Fill the shrimp mixture on top of Avocado and finish off on top with spice if desired. Serve and enjoy! We met in the summer 2015, we were introduced to each other by the virtual world. Eighteen months later we were getting married on a beautiful beach on Barbados, bare foot, very simple ceremony just like a dream! Two days after the wedding laying on the beach, talking about sailing, Carla suggested... why don't we sail around the world? Guess what Simon said? "Let's do it" He took it with no second thoughts! And here we are, fifteen months after that day in Barbados, we started our adventure in Croatia. We made it happen working through all the challenges on the way. Now we are enjoying this wonderful life, and what a wonderful life it is! As we travel we will cross less fortunate countries, we would love to help to build a school or a health care centre, anything that these people may need, and in our beautiful world this is taken for granted. But for these people it's a dream, or may not even be a dream. We will look around and when the opportunity to help comes we will put our hands and hearts in to it.

S/V Lynx crew testing out some scuba gear: a new dry suit, a new regulator, and a new video light down at Laguna Beach, CA, on June 2nd, 2018. We started the dive at 6:30 and we were underwater for 65 minutes. No leaking from seals or anywhere else on the Scubapro dry suit, the Sherwoord SR2 regulator worked flawlessly, and the 18000 lumen video light worked great!
