This black bean burger is a favourite aboard our boat. It’s super easy to make and incredibly delicious! It comes together quickly and can easily be made at anchor. It’s the perfect meal for a boat and something we eat often on Paragon. ⬇️ Recipe below ⬇️ If you make this, please let us know! We'd love to see a picture posted on Facebook or Instagram. @DrakeParagon Black Bean Burgers INGREDIENTS 1/2 large red onion or two small red onions 1 whole chilli pepper (optional) 2-4 cloves garlic 1 15 ounce cans black beans drained and rinsed 1/2 cup plain bread crumbs 1 teaspoon cumin 1/4 rounded teaspoon salt 1/4 teaspoon black pepper 1 large egg DIRECTIONS Place onion, chilli, and garlic into a food processor and pulse until finely chopped. Add in black beans and pulse until the black beans are partially chopped, leaving some whole or partial beans. Transfer to a large mixing bowl. (Don’t have an immersion blender/food processor? No worries. Just finely chop the veggies and then mash everything with a fork or potato masher.) Stir in the bread crumbs, cumin, salt, pepper and egg until well combined. Divide up the mixture to form 4 patties. Stove: Heat a lightly oiled pan to medium high heat. Cook for 5 minutes on each side. Grill: Cook on an outdoor grill for 5 minutes each side. What happens when you don't pick up your camera for two weeks to film? We found this out just before our trip to Vietnam, when we decided to get a lot of work in, but completely forgot to film any of it. So, what do we have to show you just before our departure? Well - as the two of us would look at it - not much unfortunately. We spent an entire two weeks without picking up the camera as we worked. Just put our heads down each day and toiled away at our projects without a second thought of actually showing what we were doing. Until we were done with those projects of course and then thought "Huh....we really should have filmed that". But, what we DO have for you is a very nice updated tour with all the work which has been completed in that time. If you haven't seen anything new happen since our guest shower pan going in, you're about to be blown away!! I also take a few minutes to work on fairing out a new set of storage cabinets and begin working with a 3M body filler, since we're told it will do better in heat and humidity. (Vs our Total Boat Polyester Fairing Compound, which seems to keep getting gummy on me and hard to sand...at the moment). This time the sharks of Compass Cay come to visit us instead of the other way around. A steady stream of these beautiful creatures comes to the boat to hang out with us. A deeply hung over Lisa makes the hike to Rachel's Bubble Bath on Compass Cay, under protest. When we get there, it's so beautiful, she doesn't want to leave! The currents are a beast on the pipe creek side of Compass Cay. The sand is beautiful and we held well in spite of being anchored into the side of a sand shoal, but the current spun us in tight circles all night, so we moved closer to Starry Horizons around the corner. The current was still strong, but less spinny. The sharks didn't mind it, and we had a steady stream of them come to the boat, with several coming right to Lisa for her to pet them. Strangford Lough Yacht Club turned on a perfect late summers day for their annual regatta. There were four boats lining up in the IRC 1 fleet with close racing expected between the evenly the evenly match fleet. The sun shinning, blue sky's and a light sea breeze blowing the crews would have to be on their game to keep the boats moving, avoiding any of the holes which were bound to appear as the day went one. The action kicked off from the first minute with one boat early for the start and several close crosses up the first beat. The J109 Going to Red managed to get it nose in front early completing two key lee bows on the first beat to lead at mark 1. Once in the lead they never looked back manage to join up the pressure lines to extend their lead at every mark. The risk of the breeze fading the race committee shortend the course at the second last mark to give all the competitors a chance to finish within the time limit. Going to Red took both line and handicap honours ahead of another SLYC boat Fat Tony. The team team at bottom up boats hope you enjoyed the coverage of the SLYC Regatta 2022.

Sailing and living full time on a boat often robs you of routine and structure. Adapting is a must, and finding ways to work in some routine day to day helps keep the balance. We begin this video with a look into some of our routine. Katy often begins her day with journaling, coffee and yoga. Cooking all our meals is also routine and something Katy and I LOVE to do. We try and get off of the boat as often as possible to stretch our legs and explore a new place. We find a water well on Shroud Cay, capture a fast as lighting humming bird, and then head back to Seawind. All before noon! Sailing is often one thing after another and after lunch we fold up our dinghy, and sail off anchor heading north to Highborn Cay. Beautiful, brisk sailing and a hearty meal in our new anchorage top off the day. It's late in the season when we finally depart northern Costa Rica bound for Chiapas, Mexico. We hear that the coast of El Salvador & Nicaragua is known to spawn early season hurricanes as well as house intense squall activity. The squalls we encounter have lightening like nothing else we've experienced thus far in our travels. In fact, its the first time we felt compelled to put essential electronics in the oven to protect them in a "faraday cage". The passage starts well enough with acrobatic dolphins playing all around the boat. With the exception of the nightly squalls we are impressed by how peaceful the sea state has been in the Pacific Ocean thus far. We spend much of our evenings ducking in and out of squalls trying to avoid the worst of the lightening. Finally after four days we are far enough North to be past the worst of the squalls. Approche et visite des îles Cies puis rencontre avec les dauphins en train de chasser en naviguant avec le voilier Fou de Bassan, un OVNI 445 du chantier Alubat.

A la mise à l'eau de notre voilier Tagomago, après avoir réglé quelques inévitables embrouilles de début de vacances, nous avons musardé sur la lagune de Faro et visitées l'île de Culatra. Il y a plusieurs années, hors-saison, j'étais déjà passée dans ce coin : la navigation y était sauvage, le petit village et ses pêcheurs semblaient oubliés du monde ... Ce n'est plus vraiment la même ambiance ! Musique lounge, vagues de touristes, centaines de bateaux dans tous les sens ... malgré cela, nous avons passé de merveilleux moments !

Segeln ohne Wind,…also wahrscheinlich der langweiligste Segeltag des Jahres…nahe an der Frustrationsgrenze, aber auch das gehört ab und an dazu. Ich hätte das Video gerne „Leichtwindsegeln“ genannt, aber selbst das wäre übertrieben. Ich nutze die Gelegenheit und erzähle mal ein bisschen was zum Cat, zu der Bedienung und der Segelei im Allgemeinen. Die eigentliche Idee, das Ganze einfach durchzufilmen ließ sich leider nicht umsetzen, da sich die Kamera hin und wieder, vermutlich aufgrund der hohen Temperaturen, einfach abgeschaltet hat. Wer sich das Video komplett anschaut…Hut ab…vielleicht hilft es beim einschlafen…😉. Ansonsten habe ich mal ein paar Kapitel eingefügt und man kann sich die entsprechenden Stellen raussuchen.
