It's a pantry meal with lots of flavor & it's super healthy. Here's how it's done... EASY LENTIL SOUP SERVES: 4 to 6 Olive oil, for cooking 1 chopped onion 1 chopped carrot 1 clove garlic, minced 2 cups dried lentils 1 (15-oz) can diced tomatoes 4 can-fulls water 1 teaspoon ground cumin Salt & pepper, to taste 1. Heat olive oil in a large pot. Add the onion, carrot and garlic and cook until soft, about 5 minutes. 2. Add the lentils and cook, stirring, 3 minutes. Add the tomatoes, water, cumin, salt and pepper. 3. Bring to a simmer and cook, stirring occasionally, 1 hour or until lentils are tender. 4. Transfer half the soup to a blender; blend until smooth. Return to the pot and stir to combine. NOTE: Want to spice it up? Try stirring in lemon juice, cider vinegar or hot sauce for a little kick. Serve topped with olive oil, parsley or yogurt! *Leftovers are GREAT for lunch!

Pinchitos are very popular in Spain. The origin of the dish is from Morocco but we (Spaniard) invented the pork version of it! You can also do it with chicken and lamb, but in Spain we prepare it mostly with pork. Chicken may be safer and easier to find in some region of the globe depending where you travel. It is very easy to prepare in a boat and can be cook on the barbecue or in a skillet pan. We like them spicy, but it is not mandatory and you can remove the red chili if you want to. As usual, this recipe is adapted for boating. If you don't find Ras-El-Hanout you can do it yourselves mixing: cardamom, cumin, clove, cinnamon, nutmeg, mace, allspice, dry ginger, chili peppers, coriander seed, peppercorn, sweet and hot paprika, fenugreek, and dry turmeric. This is a recipe in itself. This is why it is easier to buy it. It can kept in a boat for a long time so we always have stock before sailing. Recipe 2 lbs. of pork, lamb or chicken. 1/4 chopped onion 1/2 tbsp. of red chili (optional if you don't like spicy) 1 tbsp. of olive oil 1/2 tbsp. of mint (optional) 2 tbsp. of Ras-El-Hanout 1/2 tbsp. of cumin (optional) 1 tbsp. of lemon juice Salt to taste 1. Chop the meat (pork, chicken or lamb) 2. Mix the meat and all ingredients together in a bowl 3. Marinate at least 2 hours (24 better) 4. Cook on a grill or iron skillet pan until browned on the outside (don't overcook or it will be too dry !!) Eat with rice, couscous, bread or salad. We do some boat work and relax in Gijon. After a few days we long for anchoring in a smaller town and head for Luarca. We find a mooring, but the sea is chaotic and messy. When the mooring breaks for our neighbour, Xanthippe, we are on a mountain trip and need to run down to save Urge Explorer.

After fueling up and topping off our water tanks in Beaufort, NC, it was time to move on. Our goal was to get north to the Chesapeake, but we still had a ways to go. We decided on Norfolk, VA as our next major stopover which meant 4 more days of travel on the ICW dropping anchor in Bay River, Alligator River and North River. As we neared Norfolk, we came upon our first lock of the trip at Great Bridge Lock. Once through the lock, the scenery changed drastically with huge naval ships being worked on and large container ships being loaded by cranes. It was obvious immediately that this was massive naval base. The marina I use normally opens on 15 June each year, but was delayed due to high winds. It was too dangerous and they were unable to assemble the floating marina in the high wind and wave conditions. Day 3- Nassau, Bahamas: Port is currently under construction. Junkanoo Beach is a great option. About a mile walk from port. Market outside of port has tons of good little shops. Day 4- Sea Day: We took full advantage of ZipLine, RockWall, and the Abyss. The crew members make it such a fun experience. Day 5- Falmouth, Jamaica: We lived on the Pool Deck and took part in some of the trivia's held around the ship. Intention came with a servicable but aging sail cover. It did a great job of protecting the mainsail from the Sun and other elements when it wasn't in use, but in practice we found that it was difficult to take off and put on, we had to find someplace to put it when it was not on the boom, and it was just generally a PAIN. As a result, we tended to avoid raising our mainsail when we *probably* should have. We wanted to switch to a sail PACK instead of a cover to address these shortcomings, and after getting a few estimates for having one made, we decided to buy a Sailrite LSZ-1 sewing machine and one of their sail pack kits and do it ourself. We are VERY happy we did! This is a project that we would estimate at MODERATE difficulty. Pretty much anyone that knows how to sew a straight stitch with a sewing machine can DEFINITELY sew one of these sail packs. And trust us - you will be really proud of the results!!
