In the next coming videos, we will review different ways to preserve food. Conserving meat for a long period of time can be challenging in a boat. Salt has been used to preserve food for thousands of years. The Dry Pork or Lomo Curado is very typical from Spain (similar recipes exist in Italy and other Mediterranean countries) and delicious. As we are preparing our winter cruise, I am preparing meat we will be able to keep during the entire journey. It is also wonderful for the incoming holiday time.
