One of the things I love about sailing the world and traveling the way we do is trying new foods and learning new ways of cooking. In Trinidad, one of the clear winners has been Green Seasoning! A simple yet versatile seasoning mix, we'd never come across it before visiting the Caribbean. Now, it goes on BBQ ribs and chicken, and into our Trini curries, almost becoming a staple in our galley fridge! I show you how I make a flavorful, Trinidad-inspired green seasoning, a staple in Caribbean cuisine, before finishing off with some delicious BBQ! In mine I put thyme, spring onions (chives), pimento, habanero and parsley, garlic when I remember, and usually a bit of oil and lime juice. You'd usually add chadon beni to a Trini green seasoning, but we tend to skip it as one of our boat's crew prefers it without. _________________________________________________ After backpacking Asia, road tripping Europe and doing a bit of van life, we’re now exploring the world aboard our Leopard 45 catamaran. Oggi è ufficialmente arrivata l’estate qui. Canotta, sole cocente, teste bagnate, creme solari, cali di pressione. D’altra parte stiamo correndo verso il caldo, quindi significa che siamo sulla strada giusta. Il vento è stato moderato, ma il nostro enorme gennaker blu ci fa volare a una media di 7/8 nodi. La rotta è leggermente deviata verso sud, perché stiamo fuggendo da una bonaccia incombente. Corriamo come il vento verso il vento! La pesca sta dando timidi risultati, con un grande barracuda che abbiamo prontamente restituito al mare (temiamo la cigutera) e un piccolo pesciotto che sembra essere un carango. Esperti di pesca siate clementi, a noi basta che sia buono da mangiare 😅 Ci aggiorniamo domani! C. #traversataatlantica #oceanoatlantico #vitainbarca
