One of the things I love about sailing the world and traveling the way we do is trying new foods and learning new ways of cooking. In Trinidad, one of the clear winners has been Green Seasoning! A simple yet versatile seasoning mix, we'd never come across it before visiting the Caribbean. Now, it goes on BBQ ribs and chicken, and into our Trini curries, almost becoming a staple in our galley fridge! I show you how I make a flavorful, Trinidad-inspired green seasoning, a staple in Caribbean cuisine, before finishing off with some delicious BBQ! In mine I put thyme, spring onions (chives), pimento, habanero and parsley, garlic when I remember, and usually a bit of oil and lime juice. You'd usually add chadon beni to a Trini green seasoning, but we tend to skip it as one of our boat's crew prefers it without. _________________________________________________ After backpacking Asia, road tripping Europe and doing a bit of van life, we’re now exploring the world aboard our Leopard 45 catamaran. Questa mattina la sveglia suona alle 8:00. Che poi io la uso come espressione, ma non impostiamo una sveglia da quando abbiamo smesso di fare i turni di notte in traversata. Ci svegliamo e basta. Navighiamo facendo slalom tra bonaccia e pioggerella fino a raggiungere una baia a nord di Guadalupa, proprio affianco alla spiaggia più famosa dell’isola (che abbiamo mostrato nel video di domenica). Qui troviamo inaspettatamente l’ultimo gavitello libero, nonostante la baia fosse piena di barche all’ancora. Ormeggiamo e ci mettiamo al pc entrambi. In pausa pranzo facciamo una chiacchierata con Bianca di Radio Centro Idea (che già ci aveva ospitati a radio underground), un tuffo e di nuovo al pc. Che meraviglia incredibile. A domani 🫶 C.
