Happy Thanksgiving! I decided to brine a turkey using my favorite recipe and I included the recipe for you to use as well. Ingredients: 5 cups Apple Cider 1 cup Kosher Salt 1/2 cup Sugar 4 Stalks Celery- cut into 4 inch pieces 3 Carrots- cut into 4 inch pieces 3 Oranges- cut into chunks 2 small onions- cut into chunks 6 sprigs fresh sage 6 sprigs fresh thyme 4 bay leaves 1 Turkey ~2 gallons cold water 2 cups white wine 1. Heat 3 cups of cider, salt and sugar in large pot until salt and sugar dissolve. 2. Remove from heat- stir in remaining cider, carrots, celery, oranges, onions, sage, thyme and bay leaves. Let cool 15 minutes. 3.Remove giblets from turkey and place the turkey in a container large enough to hold in and the brine. 4. Add the cider mixture, water and wine making sure the whole turkey is covered. 5. Keep cold and let sit for 1-2 days. 6. When ready to cook the turkey remove from brine and let sit at room temperature for 30 minutes. 6. Bake at 450° for 30 minutes then reduce to 350° until the turkey reaches an internal temperature of 165°. 7. Let the turkey rest for 20-30 minutes before carving. Enjoy!

It's been awhile since I have published an episode and I hope you enjoy this one. Its a little longer than usual as we had an action packed crossing. The last few weeks have been jam packed with work preparing the boat to leave NZ for Fiji, sailing to Fiji and now fixing the many things that broke on that trip. I met a guy in the Vuda Marina in Fiji who told me it takes around 2 years to get comfortable with all the systems on the boat and I think he is right. It seems like the minute I fix something in one system, another one has a problem. We had a fairly major problem with the generator at Minerva reef (watch out for next week's episode). Slowly but surely we're getting there. Most of the tie with big smiles on. :) We now have internet on board in Fiji and I'm looking forward to creating more episodes and getting them published when we are in good service.

Vlog#23 This time we sail to Santa Maria, Mexico. It was incredibly beautiful. Not many people stop here as there isn't a town with stores to provision in or anywhere to buy diesel, but its definitely worth it. We found a sand dollar beach that was covered in them. We went into an estuary that was very tricky to get into to. It was as though it had its own bar crossing, so we had to time our approach and exit, although we still managed to get soaked on the last wave on the way out. Along the estuary there are many houses and all the locals were kind and waved as we rode by. A panga even waved us over to the right spot to get into the estuary when we were clearly missing the entry way as it is kind of hidden! It was an eye opener for us, because we did not know that this history took place. The atrocity in the rural settlement started on Nov. 2, 1920. An untold number of people were killed, Black and white. It led to the lynching of one of Ocoee’s most successful Black businessmen, Julius ‘July’ Perry, in downtown Orlando. Described as the “single bloodiest day in modern American political history,” it brought about the forced removal of hundreds of Black citizens from Ocoee. @the_reeva_project Without a working anchor windlass and not wanting to pull up the anchor chain by hand our best option was to look for suitable mooring buoys that can hold our 15 ton sailboat. We had heard horror stories of the boat breaking loose from the mooring. S2E4: Fixing Boats in Paradise! There’s a common saying in the cruising community: “You’re just fixing your boat in beautiful locations” — and wow, has that been true for us this week! Our poor windlass is barely hanging on, but at least the scenery is stunning. We soaked up our last days at Little Bay 🏖️, enjoying the insanely soft sand and the crystal-clear water (seriously, you could see our anchor!). Then it was time to carefully pull anchor and head back around to Staniel Cay 🏝️. It was definitely time to provision — we were running low on fuel & propane, we desperately need to do laundry… everything! Plus, Brent's parents arrived, bringing much-needed supplies from the States! After they arrived, we sailed back up to Warderick Wells 🌊, trying to snag a mooring ball before a big blow hit. Warderick has some of the best protection in the Bahamas — but arriving at night is no joke, with mooring balls, sandbars, and reefs to dodge. Thankfully, we had tracks from our last visit! We squeezed in some amazing snorkeling and got to show Brent’s parents all of our favorite spots! Plus, they brought a brand-new bridle (remember the one that snapped on Night One in the Bahamas?). After installing the bridle, we made our way back down to Staniel Cay again for a lunch date with some of our favorite sailors and another big grocery run — feeding 7 people takes a lot of food! Oh — and our new windlass is on the way!
