We wrap up our time in the Dominican Republic with one last dreamy anchorage in front of the stunning Cayo Levantado, before setting sail on a 2-day open water passage to the Bahamas! Most of this episode follows our journey across the sea โ€” the sails, the conditions, the quiet moments underway โ€” until we finally make landfall in Inagua, Bahamas. After checking in, we head to a peaceful anchorage to rest up... because the real adventure is just beginning. โ›ต Watch as we sail from the DR to the Bahamas ๐Ÿ“ Final stop in the Dominican Republic: Cayo Levantado ๐ŸŒŠ 2-day offshore passage ๐Ÿ‡ง๐Ÿ‡ธ Clearing into the Bahamas at Inagua โš“ Resting up before exploring more of the Bahamas! #sailing #bahamas #offshoresailing HOMEMADE GREEK GYROS: 1. Homemade Pita Bread Ingredients: โ€ข 1 cup warm water (not hot) โ€ข 2 tsp active dry yeast โ€ข 2 ยฝ - 3 cups all-purpose flour โ€ข 1 tsp salt โ€ข 1 tsp sugar โ€ข 1 tbsp olive oil Instructions: 1. Mix warm water, yeast, and sugar in a bowl. Let it sit for 5โ€“10 minutes until foamy. 2. Add flour, salt, and olive oil. Knead until the dough is soft and smooth (about 8โ€“10 mins). 3. Let rise in a warm spot for 1 hour (covered), until doubled in size. 4. Divide dough into 6โ€“8 balls, roll each out into a round flatbread. 5. Cook in a hot dry skillet for 1โ€“2 minutes per side, until puffed and golden spots appear. โธป 2. Tzatziki Sauce Ingredients: โ€ข 1 cup Greek yogurt โ€ข ยฝ cucumber, grated and squeezed dry โ€ข 2 cloves garlic, minced โ€ข 1 tbsp olive oil โ€ข 1 tbsp lemon juice โ€ข 1 tbsp chopped fresh dill or mint (or both) โ€ข Salt, to taste Instructions: 1. Mix all ingredients together in a bowl. 2. Taste and adjust salt, garlic, and lemon juice. 3. Let sit in the fridge for at least 30 mins to blend flavors. โธป 3. Gyro Meat Seasoning + Cooking Use either chicken, lamb, beef, or pork, thinly sliced or in chunks (or marinate whole pieces and slice after cooking). Marinade Ingredients (for 500gโ€“1kg of meat): โ€ข 3 tbsp olive oil โ€ข Juice of 1 lemon โ€ข 3โ€“4 garlic cloves, minced โ€ข 1 tbsp plain Greek yogurt (optional for extra tenderness) โ€ข 1 tsp dried oregano โ€ข 1 tsp ground cumin โ€ข ยฝ tsp paprika โ€ข ยฝ tsp ground coriander โ€ข Salt and black pepper, to taste โ€ข Optional: pinch of cinnamon or allspice for warmth Instructions: 1. Marinate meat for at least 2 hours (overnight is best). 2. Grill, pan-fry, or oven-roast until cooked through and browned. 3. Rest meat, then slice thinly for gyros. โธป 4.
