Day 12 sailing solo to France and we cooked pain au chocolat

Today was a simple day. I cooked, I sailed, and I watched dolphins. I decided to try making pain au chocolat in my Omnia oven, and I may have just discovered a game changer for the Golden Globe Race. They definitely don’t look bakery-perfect, and there’s room for improvement, but they were absolutely delicious. Honestly, being able to bake fresh pastries in the middle of the ocean feels a little ridiculous. And then came the dolphins. So many dolphins. Jumping, surfing the bow wave, swimming alongside the boat as if they had somewhere important to be. One of those moments that instantly puts a smile on your face and makes you stop whatever you’re doing. It wasn’t an exciting day. It wasn’t a challenging day. It was just a really good day. And right now, that’s exactly what I wanted. France is getting closer, the final stretch is here, and soon it will be time to focus on the starting line.
