We've been lucky to catch two tunas (not too big, not too small) and I decided to check out one of the oldest recipes came to us from China - Salt Baked Fish! Why is it captivating about the way to bake a fish in salt? Because the salt coating helps the heat of the oven cook the fish evenly and gently without added cooking oils. At the end we've got a very moist fish and it’s not overly salty because the fish’s skin adds a layer of protection. Man-made underwater structures strategically placed on the house reef of Kapalai Island, Malaysia, created an incredible artificial home for marine life. Scuba diving around Kapalai Island in Malaysia is magical! Though it's the little sibling to the more famous Mabul Island, it certainly can boast about it's underwater inhabitants. In February 2020, we were fortunate enough to have one full day diving on Kapalai and we absolutely LOVED it. Kapalai was an island above the water line over 200 years ago, but now is a sand bar. The island was eroded away over time and the only resort has figured out a way to prop up houses on stilts on the spit of sand that remains. The diving was truly outstanding here and we were shocked by the size and effectiveness of the man-made artificial reef on Kapalai House Reef; the animal life was astounding! It's well worth a visit and more days diving at Kapalai. We did get to see the mating ritual of 5 stonefish while at Kapalai and look forward to sharing that video footage separately! Here we go! This is our final movie to summarise our wonderful trip to Alor. We went in August 2021 from Labuan Bajo to th East of Flores island. We navigated to Pulau Raja, Maumere, Pantar Straight and Pulau Komba. It's been amazing, and thanks to our dear guests and our crew, Jakaré extended again their destinations for 2022. For the first time on the trip the wind did not go to forecast. I went down for a nap and it was blowing from the northwest I awoke it was coming from the south. Not complaining as it allowed us to get the kite up to help fight the 3 knots of tide we were pushing against. All going well we will be docked in Dun Laoghaire around 8pm.

Our sailboat family of four head to Sucia Island in the San Juan Islands. I've been there as a teenager, but haven't been back since. Most boaters we've talked to admit, while this island is always busy over the summer, it's still their favorite destination to cruise to. It really is incredible. In this video we are stopping by Sucia before we head south for the winter. Well, south as in Port Townsend - still in the Puget Sound. We're still getting comfortable with our new boat while cruising the Salish Sea. Our boys are homeschooled - with some help from a parent/teacher cooperative they are in. Sucia has had the most abundant resources for exploring different subjects while on the boat out of the islands we had been to. Shane still has to circle a few more islands there, so we'll be back this summer! We hope to see you there.
