This is Episode 36 of our adventure. This week Hugh tries to find space to carry on with the refit whilst the kids have friends over to play. We are still trying to adapt to life afloat, the boat is for the most part a home but it is also a boat and it needs to be become building site too, we are working hard to embrace it all. Hugh starts work on installing the autopilot and then takes great takes delight in a quick temporary installation of our domestic Hotpoint washing machine. We are a family of five with plans for an epic adventure, sailing around the world. We have bought a boat we have to gut it, rebuild it, sell all of our possessions and have the guts to cast off. This trip we cook for Crazy Diamonds previous owners and take a trip down the coast to Brightlingsea for a night stay. Food.. I make stuffed chicken breast with smoked cheese and spinach, sautéed mushrooms, sautéed potatoes and a red wine jus, and a strong finish with pear soufflé. I have chopped around with the format this week for the food for numerous reasons but mainly because with me explaining everything it is creating around an hour of edit which is certainly to long. The recipes. (For 4 people) (As always organic food where you can) Large Chicken breasts x 4 2 rolls smoked cheese diced (Any other cheese will work) 2 large handfuls of spinach diced 6 sheets parma ham (1.5 per chicken) season Method (As per video) Pan fry for 10 mins Oven on 180c for 25-30 mins. The Red wine Jus - 1.5 glasses of redwine - 1 shallot - 1 garlic clove - Bouquet Garni (Parsley, thyme, bay leaf) - 2 knobs butter - Good quality beef / veal/ stock - tomato puree 1 x tbs Method Sweat onions and garlic in some butter or olive oil, add puree and cook out for 4 mins, add bouquet Garni and red wine, reduce by 2/3s, add stock, reduce by half, Strain , add butter and season to taste. Sautéed potatoes 4 x large potatoes (Slice into 1cm thick slices) (2-3 pp) Beef stock cube Salt Herbs (Thyme / Rosemary/ Oregano work best) Butter Olive oil Method Slice potatoes and wash in cold water Add boiling water to cover Herbs and stock cube to pot and salt and bring to the boil. 10-15mins till just soft enough to put a knife through. Strain water and leave for 5 minutes for steam to come off. Olive oil the pan and place potatoes on the pan so each is free (Not covering each other) Add herbs, seasoning butter and olive oil as per the video. Roast for 30 mins on 180c and then turn up to 220c for 5 minutes at the end to crisp. Sautéed wild mushrooms 1 x punnet wild mushrooms Clean and chop in half / keep whole if small enough 1 x finely chopped garlic clove 1 x bunch parsley 2 x sprigs thyme salt pepper Butter Method Butter in pan, garlic in ofr 3 mins medium heat, mushrooms in, salt and pepper, thyme, cook off for 6-8 mins, dice parsley to finish and mix before serving. Soufflés 300g fresh pears (Skinned, hulled and diced) 2 tbs demerara sugar 1/2 lemon juice 1 Tbsp water 1 tbsp pear liquor / kirsch (Optional) 1 x tbs corn flour slaked with a dash of cold water 5 x free range egg whites 40g caster sugar plus 40g for dusting ramekins Softened unsalted butter for lining ramekins Clotted cream to serve (Optional) (You can add some crushed toasted nuts if you fancy) Method Pears in pan with liquor, water, Demerara sugar, reduce down and blitz, saving a few large slices per portion. (Low heat for around 15-20 mins) Bliz up and add the cornflour mix and pass through a sieve. Butter and sugar ramekins. (4 x plus an extra just in case) whisk egg whites to stiff peaks, add the caster sugar and whisk again until stiff. (Should be like shaving foam consistency). Remove 1/3 of the mix and put aside, mix in the puree and mix in thoroughly, be gentle but firm. Add the remaining egg whites and gently fold in. Add a spoon full of mix in the ramekin and then add the pears on top. Top up and smooth off mix with a palet knife, then clean off sides and mark around the edge with a nail or end of a sharp knife. Bake for 8-10 mins on 200c Serve and enjoy. Hope you like it... Any questions just ask. best Carl and Charlie xx

It's a one pot wonder so no messing about and saves on the washing up! It's purposely wet during the simmering so you can simply add the pasta at the end and the pasta cooks in the juices which ultimately creates mega flavour pasta. Ingredients (Makes 6 main portions) - 2 x Beef Shins (1kg approx) - 3 x shallots or white onions (Diced) - 3 x carrots (Diced) - 2 x sticks of celery (Diced) - 4 x garlic cloves (Diced) - 6 x tomatoes (Diced) - 1 x Tin chopped Tomatoes - 1 x Bouquet Garni (Thyme, Rosemary, Bay Leaves) - 2 x tsp oregano - 2 x tbsp Worcestershire sauce - 2 x tbsp tomato puree - 1 x glass red wine or red wine stock cube (I used a cube in the video as we had no red wine) - 500mm beef or veal stock - 2/3 can of water (fill tomato tin and shake out and add to pan) - heavy seasoning of salt and pepper - 1 x 500g packet of pasta (Your choice, I used Conchigile Rigate (Shells) - Parmesan to finish (or any cheese you like) - huge glug of olive oil Method - Cut beef into big chunks & brown beef in oil - Throw in carrots, onions, celery, garlic - Leave to sauté for 5 mins - Throw in tomato puree cook out for a minute - Add red wine or red wine stock cube (Cook off wine for 2-3 minutes if using) - Add Tomatoes, bouquet Garni, tinned chopped tomatoes (and water) , stock, oregano, Worcestershire sauce and seasoning. - Stir well - Add lid and leave for 2-3hrs on low simmer (or in slow cooker) * If you have a pressure cooker then this would be ready in about 1-1.5hrs. - Test beef for tenderness and then break up with a masher (You can leave big if you like the chunks (I like a 50/50 mix) - Add pasta and lid and leave for 15 minutes - Test pasta and serve with parmesan when ready and a drizzle of oil. ADDITIONAL TIP - If you have leftovers you can put this in a tray and add a layer of Béchamel sauce for a lasagna style pasta bake! I hope you enjoy!! His mission ? to protect marine mammals all around the world. THE JULES VERNE TROPHY, A LEGENDARY RECORD Around the world in eight days was published by Jules Verne in 1873 and inspired sailors to create one of the greatest ocean adventures of modern times, the Jules Verne Trophy. Since the first attempts in the winter of 1993, the crewed round the world record has attracted a lot of interest. Far from being over, it already has a rich history. By taking part in his first crewed record attempt, Francis Joyon could well write a new chapter in this saga… After a fantastic race, Peyron won the tenth edition of the Route du Rhum with a time of 7 days, 15 hours 8 minutes and 32 seconds – a new race record! Peter Digby was the Royal Yacht Club of Victoria's Cruising Yachtsman of the year in 2012-2013. He is the third generation of Digbys at the Club and his grandfather Ernie was an acclaimed boat builder - his classic 51ft racer Frances is still at the Club. In the 1950s Ernie also designed Port Phillip pilot boats, one of which, Thorsen, is today the race committee boat. Ernie was the RYCV Commodore in the mid 1950s - an honour repeated by Peter's father Len in the mid 1960s. ----------------------------------------------------------------------------------------------------------------------------------------------------- Portraits in the Pens is a video series showcasing the members of the Royal Yacht Club of Victoria.
