Deciding to cook a 120lbs pig for the non profit organisation called Casa Guatemala, meant we had a big task on our hands. We managed to feed over 100 people here in Rio Dulce, and raised a few hundred dollars for the charity, which goes quite a long way here in Guatemala. We used a rotisserie spit to cook the pig, and had to watch it for 12 hours overnight to be ready for the big lunch. The pig was raised on the farm at Casa Guatemala, and she was actually starting to eat her own piglets so it was her time to go. Casa Guatemala is a non-profit organisation which is now a boarding school in the jungle for all of the villages in the area, and if anyone is looking to do some volunteer work, we can highly recommend considering this organisation, which only charges a one time fee of $300 for long term volunteers.
