Which way the boat heels determines which way it turns. So if you want to steer straight you want the boat flat. Using our body weight is one way to achieve boat balance but in high winds the sail will be too powered up for you to keep flat using weight alone. You'll have to use sail trim to lose some of the power. Adjusting sail camber (how flat the sail is) is one way to depower the sail. The outhaul adjusts camber lower down on the sail and the kicker adjusts the camber higher up.
