Whether he’s cooking in cast iron or on the pit of the offset smoker, his food has a West meets South flare. Today, he gets the smoker goin’ to smoke up some surf & turf…a tri tip alongside salmon filets. It’s about a 14-15 hour process, overnight, to dry brine the salmon.
