Prominent Illawarra beverage wholesaler Kollaras & Co has joined businesses voicing their support for a carefully planned revival of domestic cruise operations, as ongoing suspensions continue to wipe billions of dollars from the Australian economy. John Kollaras, Managing Director has had to cut staff and rationalise operations since cruise ships stopped sailing in March. The 60-year-old family-owned company is the latest to be featured in CLIA’s #WeAreCruise video series, which highlights the economic impact suffered by local businesses and the 25,000 jobs that are at risk across Australasia while the cruise industry remains at anchor. In the video John explains how businesses along the cruise industry supply chain have been impacted and their need for certainty in the future. #WeAreCruise

Episode 6 We had a lightning storm on the horizon, projected at 30 knots at first. We have been here before, the last storm projected 35 and resulted in 53 knots with the katabatic winds so we knew we needed to prepare the boat for a strong blow. The reality is boat life isn’t easy and it takes a lot of extra work, strong nerves and positive energy. This episode is all about showing how we prepare for the storm and ride it out. Cooking with Conner 🤙🏼☀️🌴🦩 The Grouper Sandwich! It’s been a while since I’ve had grouper and I must say it did not disappoint. Grouper was one of the first fish I ate when I started getting big into seafood about four years ago. Chef notes: Normally when I cook I marinate whatever I’m cooking in a liquid marinade. Last night when I did my grouper I didn’t do that, I only used olive oil and used my mix of seasonings. It was still very delicious, but next time, I plan on using some sort of liquid marinade along with my mix of seasonings. 1 Grouper Filet Jalapeño Red Onion Tomato Leaf Lettuce Buns Mayo & Hot sauce (I used Jalapeño hot sauce)
