JAM BARS SERVES: 8 to 10 1 stick unsalted butter, softened 1/2 cup granulated sugar 1/2 cup packed light-brown sugar 1 egg yolk 1 1/2 cups all-purpose flour 1/2 teaspoon cinnamon 1/2 teaspoon salt 1/4 teaspoon baking powder 1/2 cup old-fashioned oatmeal 1/2 cup jam (your choice of flavor), stirred to loosen 1. Preheat the oven to 350˚F. Butter a 8- or 9-inch baking dish & set aside. 2. Beat the butter and both sugar in a bowl until light and fluffy. Beat in the egg yolk. 3. In another bowl, whisk the flour, cinnamon, salt and baking soda. 4. Add the flour mixture and oatmeal to the butter mixture and mix with your hands until combined and it forms crumbs when pinched between your fingers. 5. Press half of the mixture into the bottom of the prepared pan. Top with the jam, stopping about 1/2 tsp from the edges. Press the remaining dough into crumbs and scatter over top, covering all of the jam. 6. Bake 25-30 minutes until golden, let cool completely in the pan before cutting.
