We've been lucky to catch two tunas (not too big, not too small) and I decided to check out one of the oldest recipes came to us from China - Salt Baked Fish! Why is it captivating about the way to bake a fish in salt? Because the salt coating helps the heat of the oven cook the fish evenly and gently without added cooking oils. At the end we've got a very moist fish and it’s not overly salty because the fish’s skin adds a layer of protection.
