Lauren's brother requested another cucumber drink, so we decided to try our hand at the Archangel cocktail, a recipe created by Michael McIlroy and Richard Boccato and the ultra famous NYC bar Milk & Honey- afterwards they featured it in the PDT (Please Don't Tell) Cocktail Book. It's a play on the traditional Pink Gin. So why Archangel? It's actually pretty random... The two creators came up with the name after discussing the Argentinian Football (Soccer) player Gabriel Batitusta. That’s his nickname. The cocktail is straightforward and easy to make at home made with Gin and Aperol. But wow it tastes so complex! And although it falls into the "booozy" categroy, it's the kind of drink that goes down easy during this crazy heatwave. Let us know if you try it!

Of course we are always on the lookout for an inspiring mix and we think we've found a pretty good one. The Mango Black Pepper Gin and Tonic, created by the owners of Bar One, the floating bar on the island of Bequia. Bequia is a very unique place and absolutely worth visiting. Bequia means "island of the clouds" in the ancient Arawak. We try to keep things simple around here. We liked this one because the few ingredients required are pretty easy to come by. IF you can manage- use real, fresh mango's instead of pasturized juice. It makes a huge difference. You could even freeze and blend- just be sure to stir well before topping off with your tonic. Diving the Kicker Rock in San Cristobal Island is another of the iconic dives not to be missed in Galapagos. Kicker rock sticks out of the sea like to fingers of smooth granite, and drop into great depths almost vertically.
