In this video we leave the Island of Ustica and continue west on our voyage across the Mediterranean Sea. Ingredients 2 onions several cloves of garlic 1 sweet potato 2 potatoes 1 red pepper 1 green pepper 1 aubergine 1 courgette (zucchini) 200g fresh mushrooms 1 tin chopped tomatoes 1 packet tomato purée 500g grated cheese (half cheddar; half mozzarella) large tortillas salt and pepper to taste 2T cumin 1T of each of the following: sweet paprika; turmeric; thyme; oregano; basil half to 1t chilli powder pesto sauce if more flavour is needed Sauté the onions and garlic in olive oil. Add the root vegetables that will take longer to cook (sweet potato; potato) Stir and allow to cook for a few minutes, then add the rest of the fresh vegetables, tinned tomatoes and tomato purée as well as the herbs and spices. Set the vegetable mixture aside. Then use the same pan for frying the tortillas in a little butter. I turn the tortilla once to soften both sides and increase the buttery flavour. Add grated cheese to one half of the tortilla. Then pile some of the vegetable mixture on top. (Don't use too much of the mixture or your tortillas will be too squishy to eat with your hands.) Add more grated cheese on top. The cheese acts as glue to keep the whole thing together - and of course it adds lots of cheesy flavour too! Turn the tortilla so that it is fried on both sides. If you have used butter for frying, then you will get a gorgeous, crispy golden-brown colour on the outside. Set aside to cool down before cutting into quarters and serving. Recipe for 2 Pina Coladas Ingredients: 4 or 5 pineapple rings 120ml pineapple juice 120ml white rum 120ml coconut cream 2 large handfuls of ice blocks Pulse all the ingredients in a blender until smooth.
