
? Chill Singapore Mud Crab Recipe | Sailing Pacific Star
In Josh's opinion, it's the best mud crab recipe I have made yet. ? SINGAPORE CHILLI CRAB SAUCE ? ~ Ingredients ~ - Good splash of olive oil - 1 onion | diced - Garlic to taste - Ginger to taste - 2 Tbsp sweet chilli jam | easy recipe below or use Ayam Chilli Jam - 1/2 cup tomato sauce - 1 can of crushed tomatoes - 1 cups water or chicken stock (substitute with chicken oxo cube) - 1 egg | lightly whisked - Mud crabs | Pre cooked & remove meat from crab ????GARNISHES/SERVING: - Fresh coriander , leaves whole or roughly chopped - Steam rice ~ Instructions ~ ? If you have caught mud crab, place them in the freezer for 45 minutes, to let the crabs goto sleep? Most humane way to kill them? ??? How do you boil mud crab? Simply bring a large pot of salted water to the boil, add your prepared crabs to the water, and return to the boil. Put the lid on and cook for approximately 10 minutes. 1. Prepare crab: boil crab into pieces or cook crab after step 7; 2. Heat oil in wok; 3. Sauté onion, garlic & ginger on medium-high heat. Cook for 2 minutes, stirring constantly. 4. Add chilli jam & stirring, for 3 minutes, 5. Add tomato sauce, crushed tomatoes, chicken stock and soya sauce. Cook & stirring regularly, for 4 minutes; 6. Egg ribbons: Pour the egg in a thin stream into the middle of the pot. Stir gently & slowly for 1 minutes; 7. Add coriander which is optional. Plus, crab & claws: Add the crab claws first (they take longer to cook), then stir to coat in sauce. Bring to a boil, and then reduce heat to simmer. Cover with a lid and cook 3 minutes; if cooking raw, allow 6 minutes to fully cook - cover with lid; 8. Serve over a bed of steam rice in a bowl & enjoy! ?? CHILLI JAM?? Here is an easy recipe to make chilli jam, if you can source a jar from the shops. I love keeping this in the fridge for other recipes? ~ Ingredients ~ - 15-20 long red chillies, stems removed, roughly chopped - 2 x lemons | juiced - 1 tsp salt - 1 cup sugar - 1/3 cup White Wine Vinegar - 1 tsp fish sauce |Optional ~ Instructions ~ 1. Sterilize your jam jar and leave to cool down; 2. Deseed chilies and put the cut-up chilies into a food blender or mince it up. Add the juice of two lemons and salt. Pulse until they are finely chopped and gradually turned into a paste; 3. Take the same amount of sugar as chilli paste. Approximate 1 cup of sugar and add white wine vinegar. Optional to add fish sauce; 4. Scrape the chilli mixture out of the blender and add to the cooking pan, along with the sugar; 5. Bring the pan to the boil, for 10 -15 minutes and stir continuously; 6. Take the pan off the heat and allow it cool. The liquid will become more syrupy, then from syrup to becoming sticky | jelly-like as it cools and; 7. Place jam in a sterilized sealed jar and it will be good for up to six months or more.
