This episode we explore Walker Reef on the Great Barrier Reef. This was an awesome anchorage with plenty of marine life. We managed to get some more fish and a couple of Champagne rock lobsters, which were new species for us. And we end the episode back at Cairns getting our boat ready to put on the market.
We found an epic spot to anchor on the Great Barrier Reef. We had an epic time with Salty Sings exploring the Reef and living from what we manage to catch while spearfishing. Josh had the chance to go for a swim with a Tiger shark that was lurking around the Boat, and we cooked up some delicious Crayfish chowder.
A'hoy party people! Welcome to Heidi's 40th Birthday Week ??????? This episode is about Heidi celebrating her birthday with 2 of her friends, who had flown over from Perth. Plus the Salty Sings join us too, while we explore Magnetic Island. If you ever get the chance hands to hire a car, visit Isle Hire on Magnetic Island. There are plenty of colourful of toppers roof cars to choose from. We had such a laugh cruising around the island in this car. ? The Heart Attack Melted Brie Cheese Recipe: - Brie cheese, - Honey or maple syrup, - Rosemary, - Chilli flakes, - Cherry tomatoes, - Chorizo, - Olive oil. 1. Lightly score the top of the cheese with a knife. Add honey on the top of the cheese and sprinkle chilli flakes and rosemary on the top. 2. On a low heat in your frying pan, add a little oil and Brie Cheese. Placing cherry tomatoes and chorizo around the side of the cheese. 3. This episode we visited the world famous Whitehaven beach, this is one to add on the bucket list. This place is absolutely stunning! With beautiful walking trails and crystal clear waters, you could spend a few days just soaking up the sun and views. We return back Airley Beach and enjoy some much needed retail therapy - yes I am a princess ? Catching up with boat jobs, we had the help from Des, the legend! We legit saved ourselves thousands of dollars, with the help of Des and a foreign language, YouTube tutorial on how to do the repair. Then we encountered a rat on board, not sure how this fury little bugger got on board. But we were very happy that Josh caught him. The Port of Airley Marina, in my opinion is one of the best marinas we have visited. With the convenience of Woolworths a short walk away and liquor store. Plus many nearby restaurants, a huge kids park and a 10 minute walk to the lagoon to cool down. It was on the pricy side, at $150 per night. In Josh's opinion, it's the best mud crab recipe I have made yet. ? SINGAPORE CHILLI CRAB SAUCE ? ~ Ingredients ~ - Good splash of olive oil - 1 onion | diced - Garlic to taste - Ginger to taste - 2 Tbsp sweet chilli jam | easy recipe below or use Ayam Chilli Jam - 1/2 cup tomato sauce - 1 can of crushed tomatoes - 1 cups water or chicken stock (substitute with chicken oxo cube) - 1 egg | lightly whisked - Mud crabs | Pre cooked & remove meat from crab ????GARNISHES/SERVING: - Fresh coriander , leaves whole or roughly chopped - Steam rice ~ Instructions ~ ? If you have caught mud crab, place them in the freezer for 45 minutes, to let the crabs goto sleep? Most humane way to kill them? ??? How do you boil mud crab? Simply bring a large pot of salted water to the boil, add your prepared crabs to the water, and return to the boil. Put the lid on and cook for approximately 10 minutes. 1. Prepare crab: boil crab into pieces or cook crab after step 7; 2. Heat oil in wok; 3. Sauté onion, garlic & ginger on medium-high heat. Cook for 2 minutes, stirring constantly. 4. Add chilli jam & stirring, for 3 minutes, 5. Add tomato sauce, crushed tomatoes, chicken stock and soya sauce. Cook & stirring regularly, for 4 minutes; 6. Egg ribbons: Pour the egg in a thin stream into the middle of the pot. Stir gently & slowly for 1 minutes; 7. Add coriander which is optional. Plus, crab & claws: Add the crab claws first (they take longer to cook), then stir to coat in sauce. Bring to a boil, and then reduce heat to simmer. Cover with a lid and cook 3 minutes; if cooking raw, allow 6 minutes to fully cook - cover with lid; 8. Serve over a bed of steam rice in a bowl & enjoy! ?? CHILLI JAM?? Here is an easy recipe to make chilli jam, if you can source a jar from the shops. I love keeping this in the fridge for other recipes? ~ Ingredients ~ - 15-20 long red chillies, stems removed, roughly chopped - 2 x lemons | juiced - 1 tsp salt - 1 cup sugar - 1/3 cup White Wine Vinegar - 1 tsp fish sauce |Optional ~ Instructions ~ 1. Sterilize your jam jar and leave to cool down; 2. Deseed chilies and put the cut-up chilies into a food blender or mince it up. Add the juice of two lemons and salt. Pulse until they are finely chopped and gradually turned into a paste; 3. Take the same amount of sugar as chilli paste. Approximate 1 cup of sugar and add white wine vinegar. Optional to add fish sauce; 4. Scrape the chilli mixture out of the blender and add to the cooking pan, along with the sugar; 5. Bring the pan to the boil, for 10 -15 minutes and stir continuously; 6. Take the pan off the heat and allow it cool. The liquid will become more syrupy, then from syrup to becoming sticky | jelly-like as it cools and; 7. Place jam in a sterilized sealed jar and it will be good for up to six months or more. Hummocky Island What a ripper of a spot, to do an over nighter and to stretch your legs after a long passage. It was 20nm trip to north of Great Keppel Island. ?? Great Keppel Island This is one of my 5 favourite islands to visit in Queensland. We have spent time here, in the past and it's so close to Rosslyn Bay, Yeppoon. ? BEACHING at Leeke's Beach / Creek: epic spot out the front of the creek and not many sandflys we noticed in May. We did go do some recon up the creek, as fellow yachties mention it's a great place to dry out. But we were getting bitten heaps. It wasn't very windy and very protected where we beaches our boat. ???? WALKING to Fisherman's Bay from Leeke's Beach is 2.5km freak and was just over an hours walk, along an old 4WD track. Mostly gravel, with a 2-3 steep hills to walk. Highly recommend it, so much beauty and amazing views overlooking the bays and mainland. ? SVENDSENDS BEACH - MAKESHIFT YACHT CLUB: Thks place was a treat to have sundowners at, with a firepit, chairs, table, gazebo, camp oven, woks, frying pans etc?? it was such an awesome spot to enjoy a cook up and have a chat to fellow yachties. Over the years the yachties have created this meeting place, where you can enjoy a cook up. Extra bonus is, there is a few coconut trees near by, don't forget to bring some ice & coconut rum ? ? So have the delivery to island from 6.30am on day, The guys on the Ute actually drove it over to the resort because it came on 2 different ferries, due to the ferry breaking down (what are the chances)? I did a lot of research into this and found that this company was amazing to deal with. This was by far, the cheapest option for us to hire a 4WD and explore, without having to go on an expensive group tourist tour and bring a high car over on a barge with the additional cost. We packed our esky, towels and floaty. Then hit the tracks, with our guest. If you're to hire from these guys, I strongly recommend that you do the 30 minute induction the day prior and complete whatever paperwork is necessary. So you can make the most out of your day hire the following day. Plus, discuss with the staff about the tides, you're very restricted with where you can visit on the eastern side of the island, once it's high tide. We headed straight over to the eastern side of the island, first thing in the morning. Which over all was a 1hr trip, to reach the eastern side of Fraser Island. The company will give you a map, and there's plenty of places to visit. There's also pubs, bakeries and fuel on eastern side of the island. The places with we visited: ?S.S. Maheno ?Eli Creek - Bring floaties to float down the creek ?Central Station - Invincible Creek and only have 20 minute walk ? This video is in memory of Raff - Raffaele Pagliarini from SV YAWO. The first time we met Raff was in Middle Percy Island lagoon, where he had his catamaran beached. We had shared a few dinners together and he invited us over for wood fire pizzas. It was such a unique experience and it was the best tasting pizza we have ever had. Raff shared many stories, of his 40 years of sailing. Originally from Italy, this man truely knew how to live off the grid and was self-sufficient. He once mention that he had been 8 months without going to the shops to provision. He would trade with fellow yachties, for the exchange of home-made bread. Raff also shared in the 40 years of sailing, not once had he gone into a Marina. That still blows my mind away. He was a true sailor, with a wealth of knowledge and always making interesting modifications to his vessel to make it sail faster. He was like the mad scientist and Josh would say his boat reminded him of the movie "Water World". Raff will be truely missed in the sailing community. He had the biggest heart, full of so much knowledge and he was such a unique individual. His unique way of life, is such an inspiration. From the way he made modifications to make his catamaran & canoe to sail faster. To living off the land and sharing his knowledge about his inventions. From growing vegetables on land and harvesting his crop, he was known for helping fellow sailors out in the community. We count ourselves very fortunate to of crossed paths with Raff. We were also lucky enough to have the opportunity to enjoy his yummy wood fire pizzas. A memory we will treasure forever? This episode we sail to Bundaberg, dropping anchor near the sugar terminal and go to help some mates out with getting their yacht lifted for an inspection. It was crazy wind and tide conditions ? We then go up the river to Bundaberg, where we anchor in area where there is old submerged broken piling moorings, dealing with strong currents and having to change anchorage a few times. We went exploring the town, visiting Bundaberg Rum Distillery, Hinkler Hall of aviation and Alexandra Park & Zoo - easy to walk to along the river and free of charge. ?then we made a trip down to Hervey Bay to pick up our new Windlass. Where Josh installs the new Muir Windlass and fixes up a leak in Pacific Star. Unfortunately we had issues with the local kids, vandalising our tender at the local pontoon. Where they untied it from the pontoon, threw all of our life jackets overboard. Which ended up down on the bank 200m away and Heidi rips into them, to go retrieve them. Then we end up at the Lighthouse Hotel, where they have a courtesy bus. Great customer service and kid friendly. This episode we sail our fastest maintained speed on Pacific Star. Leaving Percy Island and arriving 17hrs later at Great Keppel Island. We get some boat jobs done at the Great Keppel Marina in Roslin Bay. ?while we cross our fingers that cyclone Gabrielle doesn't come our way. We drop anchor at Sea Hill Point, getting some drone footage of some homesteads on the northern side of Curtis Island. And we negotiate the Narrows, along Curtis Island, with glitching navionics and without getting beached as bro ? We are so excited to share our experience with beaching our catamaran for the first time, in Percy Island lagoon. It was long over due to dry out the hulls on our boat. With 7 weeks growth from staying on the Cairns piling moorings, it was good to give her a clean. Percy Island is such an epic spot to visit, with the famous Percy Island Yacht Club a Frame Hut, to cooking up a feed of freshly caught mud crabs from the lagoon on Australia Day. We explore Cape Upstart hiding out from some wind. We managed to catch some big muddies and cook up a feed of delicious crab linguine. We also find a beautiful fresh water creek to have a swim in on a hot day. According to Navionics you can fill up your jerry cans and top up your water tank. Recipe for Seafood and Garlic Linguine: 250 gm linguine pasta 3 tbsp olive oil 4 garlic cloves, finely chopped 6 anchovies, roughly chopped 1 tbsp capers, roughly chopped chilli flakes, to your taste (optional) Mud Crab Big, white flakey fish 1/2 cup white wine (pinot gris) 1.5 tbsp tomato paste 1/8 tsp salt or to taste pepper, to taste 6 cherry tomatoes, halved Garnish 2 lemon wedges 3 sprigs parsley leaves, finely chopped (without the stem) Ingredients: 1. Prepare all of your ingredients. 2. Cook the pasta according to packet instructions. 3. Add the olive oil and garlic into a cold fry pan. Turn the heat to medium and allow the garlic to infuse. 3. Once the garlic is bubbling (roughly 3.5 minutes), add the anchovies, capers and chilli flakes (if using). With a wooden spoon mash the anchovy into the oil 4. and simmer for a few minutes. 4. Check if the pasta is nearly done, about 80% cooked. If so, proceed to the next step, if not take the fry pan off the heat and wait until the pasta is further cooked. 5. Turn the heat up to medium high, and add the prawns and squid into the fry pan. Cook for roughly 30 seconds. 6. Add the wine, tomato paste, salt and pepper. Stir until thickened. (If the sauce appears to be thin, then add more tomato paste.) 7. Add the pasta straight from the pot and into the fry pan. Combine thoroughly with wooden spoons. 8. Gently toss in the tomatoes then taste check for seasoning. Adjust to your preference. 9. Divide into plates and squeeze some lemon juice over the top. 10.
