Andalusian traditional cuisine has so much to offer and now you can try it from the comfort of your home with easy recipes from our Andalusian friend Teresa in her home: from fresh delicious cold tomato cream soup to warm savory stew with Iberian pork meat and desert "Jamon from the sky". Jamón Ibérico (Pata Negra) is the king amongst hams is produced from pigs who roam the countryside and feed on acorns. The ham is cured for between 14 and 36 months. The cuisine in Andalusia is an important part of the popular cuisine of Spain. A good example of the Mediterranean diet with the influence of the diverse cultures that have passed through our lands, such as the Roman or the Arab. Ingredients: -1 onion. -1 bay leaf. -1 clove garlic -1 tomato. -1 carrot. -1 bell pepper. -1 ripe tomato. -7 potatoes approximately. - A glass of white wine or fragrant wine. -Oil. -Salt. -Pepper. -Colorant. - 300 grams of pork ribs in small pieces. -Water. - Parsley (optional). Elaboration: Put in the pot, olive oil to make a sauce with garlic, onion, tomato, pepper, carrot, and bay leaf. When it is ready, add the peeled and cut potatoes into smaller pieces and add pepper, salt, a pinch of food coloring, and the meat, then the wine and stir a little for about two minutes. Next, we add the water to cover the potatoes and let it cook little by little, covering it, but not completely, with a lid, turning it from time to time and adding so that it does not stick, or in a fast pot under pressure, for about 15 minutes.
