What you will realize is that my recipe has more depth and layers of flavor due to the ingredients and cooling process. It is six years in the making and is even better than the original due to the extra depth additional traditional masala spices. Enjoy this superior fresh ginger hot and fiery chai anytime while saving money while making this at home and also be a hero by sharing with your friends! Ingredients 35 green cardamom pods (rough grind in a spice grinder) 4 star anise 2 teaspoons whole cloves 8 dried bay leaves 8 (1 inch) cinnamon bark or sticks 1 tablespoon whole coriander seed 1/8 teaspoon fresh ground whole nutmeg 1 tablespoon whole black peppercorns 10 tablespoons Red Lable black Assam tea or rough ground black tea substitute 8 cups water (6 for the tea & 2 reserved to blend with the ginger) 1 pound clean whole unpeeled ginger Directions Step 1 Place all of the spices and tea along with 6 cups of water and cut the heat on your pressure cooker or instant pot on high and when is starts steaming, reduce heat to simmer and cook at high temperature for 5 minutes and then turn off the stove and allow the cooker to rest for 15 minutes before opening. Step 2 While your pressure cooker is cooking, you can be prepare your fresh blended ginger concentrate by weighing 1 pound of clean unpeeled fresh whole ginger and then cutting it into 1 inch slices with the skin on. Next, add all to the blender and cover with the remaining 2 cups of water (add more if necessary) and then blend to a fine consistency. Step 3 Open the cooker with the cooked spices and tea and then let It cool. Next when the tea Is cool add the ginger mixture from the blender and stir a few times to mix and let sit for 20 minutes.
