One of the things I love about sailing the world and traveling the way we do is trying new foods and learning new ways of cooking. In Trinidad, one of the clear winners has been Green Seasoning! A simple yet versatile seasoning mix, we'd never come across it before visiting the Caribbean. Now, it goes on BBQ ribs and chicken, and into our Trini curries, almost becoming a staple in our galley fridge! I show you how I make a flavorful, Trinidad-inspired green seasoning, a staple in Caribbean cuisine, before finishing off with some delicious BBQ! In mine I put thyme, spring onions (chives), pimento, habanero and parsley, garlic when I remember, and usually a bit of oil and lime juice.
