But what stayed with me the most… was watching her. An elderly Thai woman, carefully making the crispy noodles - one of the most important parts of Khao Soi. Every portion - slow, intentional, full of respect. You can literally feel it in the taste. I even got to talk to her… and you just know this is more than food. This is the 5th water outage this month in Sunninghill. I don't know who got the tender for fitting the pipes in this neighbourhood, but they need to come back and redo the entire job. I can't remember one month we've made it through without at least one days water being cut.
