Happy Thanksgiving! I decided to brine a turkey using my favorite recipe and I included the recipe for you to use as well. Ingredients: 5 cups Apple Cider 1 cup Kosher Salt 1/2 cup Sugar 4 Stalks Celery- cut into 4 inch pieces 3 Carrots- cut into 4 inch pieces 3 Oranges- cut into chunks 2 small onions- cut into chunks 6 sprigs fresh sage 6 sprigs fresh thyme 4 bay leaves 1 Turkey ~2 gallons cold water 2 cups white wine 1. Heat 3 cups of cider, salt and sugar in large pot until salt and sugar dissolve. 2. Remove from heat- stir in remaining cider, carrots, celery, oranges, onions, sage, thyme and bay leaves. Let cool 15 minutes. 3.Remove giblets from turkey and place the turkey in a container large enough to hold in and the brine. 4. Add the cider mixture, water and wine making sure the whole turkey is covered. 5. Keep cold and let sit for 1-2 days. 6. When ready to cook the turkey remove from brine and let sit at room temperature for 30 minutes. 6. Bake at 450° for 30 minutes then reduce to 350° until the turkey reaches an internal temperature of 165°. 7. Let the turkey rest for 20-30 minutes before carving. Enjoy!
