deI used 15 herbs. Normally each family in Ibiza have they own recipe. And it can be from 7 till 21 herbs. But everyone tells it have to be odd ( so no divide by 2). And the best time to collect herbs is in May or June. I used rosemary, marjoram, frigola, rue, fennel, anise, juniper 2 types, mint, peppermint, salvia, oregano, lemon and bay leafs, lemon zest and anise liqueur. Exiting the Narrows of Strangford Lough and crossing the Bar mouth to head out into the Irish Sea is always exciting when you have wind verse tide.
