Feasting for climate protection: It might sound too good to be true, but it can actually work. In Germany, transportation accounts for almost as much carbon emission as the food industry. In spring I harvest birch sap - a healthy water from the trees containing vitamins, amino acids, sugars, minerals, proteins and antioxidants. It is best to let the tree rest for a couple of years before doing it again and to plug the hole carefully after extraction.
