In this episode of Sailing A B Sea we check out Javea old town on market day and dig up some ancient Roman history about a locally made fish sauce called Garum. Basically fish guts were the ketchup of Ancient Rome. Thursday is market day in Javea old town and we'd been meaning to check it out for months but the timing was never right. We finally got there and it was packed with heaps of stalls selling a huge variety of items. We recommend checking out the locally made produce, including cheeses, hams, spices and pickled and marinated goodies. Wear comfortable shoes and sunscreen, there's a lot of walking involved. We then took a really good look around Javea old town with the hidden gem of the fortress-church of Sant Bartomeu at its centre. After a bit of research we also uncovered a local industry that produced and supplied Garum to the Roman Empire. Like modern fish sauce, Garum was also made from fermented fish, the guts specifically and salt. Romans cooked with it either as a straight flavoring or by combining it with other ingredients.
