deI used 15 herbs. Normally each family in Ibiza have they own recipe. And it can be from 7 till 21 herbs. But everyone tells it have to be odd ( so no divide by 2). And the best time to collect herbs is in May or June. I used rosemary, marjoram, frigola, rue, fennel, anise, juniper 2 types, mint, peppermint, salvia, oregano, lemon and bay leafs, lemon zest and anise liqueur. We watched as Sir Ben Ainslie's racing machine was hoisted out and packed away for the night. Sorry for any loss of video quality, all shot through the thick tinted windows of the Spinnaker Tower in Portsmouth.
