But what stayed with me the mostβ¦ was watching her. An elderly Thai woman, carefully making the crispy noodles - one of the most important parts of Khao Soi. Every portion - slow, intentional, full of respect. You can literally feel it in the taste. I even got to talk to herβ¦ and you just know this is more than food.
