The 2022 summer created many more memories for the team at bottom up boats. Our Fav 5 Photos came from both the East and West Coast and North and South of Ireland. Photo 1 was a spectacular sunset over Kilrush Marina on the night before we started the delivery of our J109 to Strangford Lough in Northern Ireland. Photo 2 was from the South East corner of Ireland with the Sun Rising over Kilmore Quay Photo 3 is the our recently purchased J109 Going to Red under full sail on her home waters of Strangford Lough. Photo 4 was surfing down some wave at over 10 knot under just main and jib as we race to get to the Fastnet Rock before sunset. Photo 4 our Fav of 2022 was a spectacular sunset over the fastnet rock with the sun lighting up the top of the lighthouse to help guide us to our overnight stay on Cape Clear Island. 🍞 Banana Bread * Melt 1/3 cup unsalted butter * Mash in 3 overripe bananas * Stir in 1/2 cup sugar * Mix in 1 large egg * Stir in 1 tsp vanilla * Stir in a pinch of 🧂 * Stir in 1/2 tsp baking soda * Add in 1 1/2 cups AP flour * Add in 1 tsp ground cinnamon * Gently stir/fold in flour just until flour is incorporated (overmixing will make the bread dense) (I use a saucepan for everything so I can melt the butter in it first and avoid more washing more bowls and things) ✨Crumble Topping * 1/3 cup flour * 1/4 cup flour sugar (half white half brown is👌🏼) * 1/2 tbsp cinnamon * 2 tbsp chopped pecans * 2 tbsp salted butter Add everything into a small bowl and use a fork to cut the butter into the flour mixture until crumbly Pour batter into loaf pan Sprinkle with streusel topping Bake at 375F for 45-50 mins until inserted toothpick comes out clean Transfer to a wire rack to cool ⠀⠀⠀⠀⠀⠀⠀⠀⠀
