After kindly being gifted a cook book by a Trinidadian vendor at the Central Market in Port of Spain I've been practicing cooking different local dishes. It's a style of cooking that's jam packed with spices and fresh ingredients that pack a punch in terms of flavour! I know how seriously the people of Trinidad and Tobago take their cooking so wanted to make sure I could do a decent effort before I shared how it went! J109 Going to Red was in the presence of sailing royalty during the Offshore race at Volvo Cork Week 2024. IMP slipped by to leeward as the J109 GTR raced off to the Gybe Mark before heading into the finish line in Cork Harbour.
