Cyclone Vaianu is creeping closer and closer and we’re really seeing an increase in wind and rain now. We’re seeing 35-40 knots consistently with reports nearby of gusts up to 60 knots. Our ladder has been blown away but otherwise we are safely strapped down and the boat isn’t going anywhere. The leaking windows are not so fun but thankfully that’s a job on our to do list anyway so we’ll get to those soon! Now we’re in the final countdown to the strongest winds and by the morning we should get a little respite as the eye passes over us. If your suffering with seasickness these gingerbread cookies will not only be tasty but they will settle your stomach! RECIPE BELOW. Harry bakes his famous gingerbread cookies while on a sail and shares them with his family. They are delicious and warm and he loves baking them! INGREDIENTS 125g butter, softened 1/2 cup brown sugar 1/2 cup Golden Syrup 1 egg yolk 2 1/2 cups plain flour 1tbsp Powdered Ginger 1tsp mixed spice 1tsp bicarb of soda METHOD 1. Preheat oven 180 degrees ( 160 fan forced) 2. Cream butter and sugar using electric beater 3. Add egg yolk and golden syrup and mix 4. Add flour , ginger, mixed spice and bicarb and combine 5. Roll into a ball and leave in fridge for 20mins 6. roll out dough between 2 pieces of baking paper 7. cut lots of shapes out using cookie cutters, we use gingerbread men, hearts and a star! 8. Bake in oven for 8-10mins. less if you want soft cookies and longer of you like them hard. 9. Once baked let cool for 10mins on tray then move to cooling rack 10. Wir waren auf einem kleinen Weihnachtsmarkt in Sardinien – ganz anders, als wir es aus Deutschland kennen. Es gab keine Verkaufsstände, keine Geschenke zu kaufen. Stattdessen drei Hüpfburgen für die Kinder, Zuckerwatte und Maronen vom Feuer. Essen und Trinken war kostenlos, wer wollte, konnte etwas spenden. Alles wirkte entspannt. Kein Gedränge, kein Stress. Die Kinder hatten richtig Spaß – und wir auch. Manchmal merkt man: Für ein bisschen Glück braucht es gar nicht viel.
