Manger du poisson frais demeure agréable et apporte une bonne source de protéine. Mais lorsque la pêche est trop généreuse, il faut trouver un moyen de conserver le surplus. Pour ceux qui ont un congélateur à bord, ce n’est pas compliqué. Les autres choisiront de faire sécher le poisson, de le faire mariner ou de le mettre en conserve. Personnellement, je fais des conserves en utilisant un autocuiseur (cocotte minute) moins volumineux qu’un autoclave traditionnellement utilisé pour faire des conserves. La température interne d’une cocotte minute n’est pas aussi élevée qu’un autoclave et les aliments ainsi conservés auront une durée de conservation moins longue. On pourra conserver le poisson quelques semaines (j’en ai conservé jusqu’à trois mois). Je sais, ce n’est pas aussi sûr comme méthode de mise en conserve, car ça ne détruit pas nécessairement les spores de Clostridium botulinum qui pourraient s’y trouver. Je vous recommande donc un autoclave pour faire des conserves dignes de ce nom et sécuritaires. Les spores sont détruites au dessus à 240 F ou 115 C. Dans un autocuiseur la température monte à 233 F ou 112 C et peut monter jusqu’à 244 F ou 118 C selon le modèle. Dans un autoclave la température monte jusqu’à 250 F ou 120 C. De plus, il vaut mieux être outillé de certains ustensiles pratiques comme des pinces à bocaux, un entonnoir à large col et un support à bocal en acier inoxydable. Les pots et les couvercles ainsi que tous les ustensiles doivent être bien stérilisés à l’eau bouillante avant l’utilisation (10 minutes). Plonger aussi les disques dans de l'eau chaude non bouillante pour activer le pouvoir scellant du caoutchouc. Méthode de cuisson: Attention il vaut mieux suivre une recette pour s’assurer du résultat. Il suffit de faire pocher le poisson 5 minutes dans un bouillon ou dans de l’eau salée. Ensuite, on insère les morceaux de poisson dans les bocaux à l’aide d’un entonnoir à conserve pour ne pas salir le goulot. Ajouter du bouillon sur le poisson dans le bocal jusqu’à 1 cm du bord. Fermer les bocaux avec les couvercles stérilisés et cuire dans l’autocuiseur en mettant de l’eau au fond de celui-ci jusqu’à 2 cm du bord des bocaux. Je peux placer quatre pots de grandeur moyenne (13 cm de haut) dans mon autocuiseur. Fermer l’autocuiseur et cuire de 60 à 90 minutes sous pression élevée. Lorsque la pression est redescendue, on peut ouvrir l’autocuiseur. Attendre que les bocaux refroidissent un peu avant de les sortir. Utiliser des pinces à pots pour les sortir. Les couvercles se scelleront d’eux-mêmes; on entend un « poc » quand ils se scellent et prennent une forme concave. En frappant le dessus du couvercle, on peut aussi entendre un son sourd quand la conserve est bien scellée. La chair du poisson sera très cuite. J’utilise ces conserves de poissons pour cuisiner des plats en sauce (genre coco-curie) ou pour faire des acras (beignets de poissons). Les couvercles de pots Mason rouillent à l’air salin et ils sont introuvables hors d’Amérique. Alors, faites-en provision avant le départ en prenant soin de les ranger dans un sac étanche vidé de son air avant de le fermer. Les pots et les bagues sont réutilisables, mais pas les rondelles d’étanchéités.
