After trying a range of home cooked dishes and practicing cooking Trinidadian cuisine I'm starting to learn the flavour profile! It's delicious but so different to what I'm used to growing up in Australia, where Asian and European cooking influences are more common. Want to know why Australians love lamb? Even the anchorage which was protected by two sea walls was rough, I filmed this inside the harbor heading from Monroe Harbor to the Chicago Lock. There were waves crashing and cascading on the outer seawall--wish I would have filmed them as the morning sunrise made them visible.
