It's no secret I love going to the Central Market in Port of Spain, the capital city of Trinidad & Tobago. Hailed by many live aboard yacht cruisers as one of the best fresh food markets in the Caribbean, we get almost all of our fresh produce from there. The shrimp is freshly caught so I buy some every week, but this time we got to try a giant king prawn, the biggest I've ever seen! Safe to say it was delicious! This is my take on a Vietnamese Vermicelli bowl that you can make right at home! As someone who is literally addicted to all Vietnamese dishes but wants something with a little less sodium - this is the perfect swap! Iceberg or green leaf lettuce Handful of vermicelli noodles (cook according to package) Sauté protein with green onions and salt Mix together 1 tbsp fish sauce 1 tbsp water half of 1 lime, 1 tsp sugar, chili flakes Add cucumber, carrots, and cashews You can use shrimp, tofu, beef or egg as your protein!
