After kindly being gifted a cook book by a Trinidadian vendor at the Central Market in Port of Spain I've been practicing cooking different local dishes. It's a style of cooking that's jam packed with spices and fresh ingredients that pack a punch in terms of flavour! I know how seriously the people of Trinidad and Tobago take their cooking so wanted to make sure I could do a decent effort before I shared how it went!
