In Bocas del Toro, every encounter feels serendipitous, and meeting the charismatic and kind-hearted Italian, Maddalena, was no exception. As we chatted, she shared that the signature dish of her hometown in Lombardy is none other than the iconic Risotto alla Milanese with Ossobuco. While traditionally considered a winter dish in Italy, enjoying it in the Caribbeanâs "winter" warmth of 24°C was a special treat. Imagine creamy, silky rice infused with rich homemade broth, the unmistakable aroma of saffron, refreshing white wine, and a generous sprinkle of authentic Parmigiano Reggiano (of courseâwhat self-respecting Italian wouldnât have Parmesan onboard, even in the Caribbean?).
