We LOVE Nando’s Peri-Peri sauce, but it's is hard to find (and pricey!) in Trinidad, so I decided to make my own version. The result; something that's smoky, spicy, tangy and full of flavour, which we can adapt to local ingredients as we sail around the work. 👉 Recipe: https://www.travelsketchsailing.com/post/homemade-nando-s-peri-peri-sauce To start, I char-grilled onions and capsicum (bell peppers) on the boat, then blended them with garlic, hot peppers, and spices. The mixture simmered then cooled before being emulsified it with oil. The result? A bright orange, homemade Peri-Peri sauce that’s just as good as Nando’s! After backpacking Asia, road tripping Europe and doing a bit of van life, we’re now exploring the world aboard our Leopard 45 catamaran.
