One of the things I love about sailing the world and traveling the way we do is trying new foods and learning new ways of cooking. In Trinidad, one of the clear winners has been Green Seasoning! A simple yet versatile seasoning mix, we'd never come across it before visiting the Caribbean. Now, it goes on BBQ ribs and chicken, and into our Trini curries, almost becoming a staple in our galley fridge! I show you how I make a flavorful, Trinidad-inspired green seasoning, a staple in Caribbean cuisine, before finishing off with some delicious BBQ! In mine I put thyme, spring onions (chives), pimento, habanero and parsley, garlic when I remember, and usually a bit of oil and lime juice. You'd usually add chadon beni to a Trini green seasoning, but we tend to skip it as one of our boat's crew prefers it without. _________________________________________________ After backpacking Asia, road tripping Europe and doing a bit of van life, we’re now exploring the world aboard our Leopard 45 catamaran. As we are leaving on a jet plane bound for Thailand to start 2025’s adventures it seems a good time to look back at all that we did in 2024. Sometimes it’s only when you look back that you truly see all that you’ve done. 2024 for us has been another year of incredible adventures; from sailing ⛵️our home from Gibraltar back to the U.K. against the prevailing trade winds, to buying a barge and navigating miles of the inland waterways to move our new home to the Midlands, and all that came between. 2025 has so much in store for us already.
