In the final leg of the deliver of Going to Red from Kilrush to Strangford we were once again blessed with clear but cold condition, the mid afternoon kill was once again warmed up by a visit from a pod of the most majestic marine mammals. A pod of around 25 Dolphins stayed and played on the bow for over 30 minutes, you can't help but get excited by these beautiful creatures. The warned us up for the final push up into Strangford Lough. Watching this back it reminds me why we need to do more to keep our seas clean and cool, allowing these animals to live and thrive for generations to come. 🍞 Banana Bread * Melt 1/3 cup unsalted butter * Mash in 3 overripe bananas * Stir in 1/2 cup sugar * Mix in 1 large egg * Stir in 1 tsp vanilla * Stir in a pinch of 🧂 * Stir in 1/2 tsp baking soda * Add in 1 1/2 cups AP flour * Add in 1 tsp ground cinnamon * Gently stir/fold in flour just until flour is incorporated (overmixing will make the bread dense) (I use a saucepan for everything so I can melt the butter in it first and avoid more washing more bowls and things) ✨Crumble Topping * 1/3 cup flour * 1/4 cup flour sugar (half white half brown is👌🏼) * 1/2 tbsp cinnamon * 2 tbsp chopped pecans * 2 tbsp salted butter Add everything into a small bowl and use a fork to cut the butter into the flour mixture until crumbly Pour batter into loaf pan Sprinkle with streusel topping Bake at 375F for 45-50 mins until inserted toothpick comes out clean Transfer to a wire rack to cool ⠀⠀⠀⠀⠀⠀⠀⠀⠀
