One of the things I love about sailing the world and traveling the way we do is trying new foods and learning new ways of cooking. In Trinidad, one of the clear winners has been Green Seasoning! A simple yet versatile seasoning mix, we'd never come across it before visiting the Caribbean. Now, it goes on BBQ ribs and chicken, and into our Trini curries, almost becoming a staple in our galley fridge! I show you how I make a flavorful, Trinidad-inspired green seasoning, a staple in Caribbean cuisine, before finishing off with some delicious BBQ! In mine I put thyme, spring onions (chives), pimento, habanero and parsley, garlic when I remember, and usually a bit of oil and lime juice. You'd usually add chadon beni to a Trini green seasoning, but we tend to skip it as one of our boat's crew prefers it without. _________________________________________________ After backpacking Asia, road tripping Europe and doing a bit of van life, we’re now exploring the world aboard our Leopard 45 catamaran. When it comes to jungle hikes our Australian Shepherd dog Rose has zero chill! When she sees a waterfall, it's just the next part of the adventure because this joyful boat dog loves sliding down the rocks in Trinidad so much we actually have to slow her down! From the rainforest to the river, she’s always the first one in and generally the last to leave. As we sail around the world, we really couldn't ask for a better dog to have by our side 🐶🐕⛵ After backpacking Asia, road tripping Europe and doing a bit of van life, we’re now exploring the world aboard our Leopard 45 catamaran. We LOVE Nando’s Peri-Peri sauce, but it's is hard to find (and pricey!) in Trinidad, so I decided to make my own version. The result; something that's smoky, spicy, tangy and full of flavour, which we can adapt to local ingredients as we sail around the work. 👉 Recipe: https://www.travelsketchsailing.com/post/homemade-nando-s-peri-peri-sauce To start, I char-grilled onions and capsicum (bell peppers) on the boat, then blended them with garlic, hot peppers, and spices. The mixture simmered then cooled before being emulsified it with oil. The result? A bright orange, homemade Peri-Peri sauce that’s just as good as Nando’s!
