Today, we learn how to make an authentic Bahamian conch salad, one of the country's most iconic and refreshing dishes, using fresh, raw Queen Conch pulled straight from the sea. What is conch salad? Conch salad is a vibrant and zesty Bahamian ceviche made from tender, raw conch meat diced and mixed with a blend of chopped onions, tomatoes, green peppers, spicy Scotch bonnet peppers, and freshly squeezed citrus juice (usually lime and orange). The result? A tangy, slightly spicy seafood delight that's served cold and hits all the right notes on a sunny island afternoon. In the Bahamas, Queen Conch (pronounced "konk") is more than just seafood - it's a cultural icon. Found abundantly in the shallow, warm waters of the Caribbean, conch has been a staple in Bahamian cuisine for generations. The large spiral shell is often used as a souvenir or decoration, and the meat is used in everything from conch fritters and chowder to cracked conch and, of course, conch salad. Today, we're not just learning a recipe - we're participating in a ritual of island life, led by someone who's been making it longer than most of us have been sailing. Fatty's personality is as flavorful as his food, and his tips and stories make this more than just a cooking demo - it's a window into the soul of the Bahamas. We also made a pit stop on Snapdragon for a taste of the infamous Hooligan Juice - a mystery rum punch that fuels many a sunset gathering - before gathering for dinner and live music at Colors Restaurant, just steps from the docks in Marsh Harbour. The evening wrapped up with good food, cold drinks, Bahamian beats, and plenty of laughter among fellow cruisers. I ritmi si fanno via via più sciolti mentre l'equipaggio si amalgama. I pasti, i turni di notte, le manovre. Poi che albe. E che tramonti. Per esempio quello di stasera è stato speciale. Immaginate la situazione: Tramonto, Blu dell'oceano che sfuma sul rosa del cielo. Onda lenta, immensa, costante. Sto leggendo sotto il boma un libro che mi assorbe completamente quando Andre porta su il pianoforte e inizia a suonare. Lentamente la mia attenzione viene attratta dalla musica che vola a un centimetro da queste onde lunghe e alte. Così alzo gli occhi e lascio che il mio sguardo mi conduca verso approdi inesplorati. Mentre guardo il movimento dell'oceano (solo di questo si potrebbe scrivere un libro), dal pozzetto la musica si interrompe e un vociare si solleva. Qualcuno ha detto balene? Delfini? Orche? Ci voltiamo tutti verso una macchia a un centinaio di metri da noi e vediamo una famiglia di orche nuotare placidamente verso nord. Che creature meravigliose. Perfino da qui lo sento. Tutti noi siamo freschi di "terrorismo orchesco" a Gibilterra quindi non sappiamo bene se goderci il momento o allarmarci. Per fortuna la natura prosegue il suo corso e la famiglia di orche sparisce presto dalla nostra vista, protetta da questa immensa distesa blu notte. Come tutto ciò che ci circonda, d'altronde. C.
