Today, we learn how to make an authentic Bahamian conch salad, one of the country's most iconic and refreshing dishes, using fresh, raw Queen Conch pulled straight from the sea. What is conch salad? Conch salad is a vibrant and zesty Bahamian ceviche made from tender, raw conch meat diced and mixed with a blend of chopped onions, tomatoes, green peppers, spicy Scotch bonnet peppers, and freshly squeezed citrus juice (usually lime and orange). The result? A tangy, slightly spicy seafood delight that's served cold and hits all the right notes on a sunny island afternoon. In the Bahamas, Queen Conch (pronounced "konk") is more than just seafood - it's a cultural icon. Found abundantly in the shallow, warm waters of the Caribbean, conch has been a staple in Bahamian cuisine for generations. The large spiral shell is often used as a souvenir or decoration, and the meat is used in everything from conch fritters and chowder to cracked conch and, of course, conch salad. Today, we're not just learning a recipe - we're participating in a ritual of island life, led by someone who's been making it longer than most of us have been sailing. We also made a pit stop on Snapdragon for a taste of the infamous Hooligan Juice - a mystery rum punch that fuels many a sunset gathering - before gathering for dinner and live music at Colors Restaurant, just steps from the docks in Marsh Harbour. The evening wrapped up with good food, cold drinks, Bahamian beats, and plenty of laughter among fellow cruisers. It is a nice cross section of brands and owners who no doubt enjoy meting each other and touring each others boats, catching some tips and ideas from each other. He had accommodations set up for us for the evening or two that we spent kind of getting to getting uh getting our stuff situated before we went drove all the way up to the boat. He took us all the way up to Punat by Kirk and we were able to get us rooms there set up. We got onto the boat. He helped us do a quick walk through on the boat. Get familiar with everything. Find anything. Any other questions that we had. So then we did a bunch of maintenance and a bunch of cleanup and he really just walked us through each step. Of hey let's check this out. Oh I don't really like that. Let's work. Marine store runs. Shopping. Provisioning. We wanted to do all that with him. So he went with us and kind of pointed out.
