For my birthday aboard @HQ2Charters we invited a local friend who also happens to be an AMAZING cook (only beaten by his wife!). After a night of liming he wanted to cook up some Trinidadian Callaloo for our international crew to try, with people there from Australia, the UK, South Africa, Sweden and the Netherlands. We were only at George Town a few days last year. This year, we're got some more time to explore all that George Town Exumas has to offer. Today, we went out to hike to the top of Monument Peak and it ultimately took us over to the back side of Stocking Island, facing Exumas Sound.
